Greek Style Baby Back Ribs
1 to 2 Racks Baby Back Ribs
1 or 2 Racks of Baby Back Ribs
2 to 3 minced garlic cloves or more to taste
dried oregano to taste
Juice of 1 to 2 lemons
Lemon zest (Optional)
salt and pepper
Mince garlic and press with back of knife to turn into a paste. (or use a microplane). Rub ribs with garlic, rub on oregano, salt and pepper and lemon zest if using. Squeeze juice of whole lemons over ribs a few hours before cooking.
Note: These can be marinated earlier in the day or overnight, but do not add the lemon juice until a few hours before grilling or the lemon will change the texture of the meat.
I used 3 garlic cloves for 1 rack & would have liked more, but I am a garlic lover. I marinated for about 4 hrs. & added juice of 1 lemon an hr. before putting on the grill.
Start up grill on smoke & add ribs for 2 hrs. Turn after 1 hr. My smoke setting was averaging 180 deg. After 1 hr. 45 min. I turned up grill to 225, it was running closer to 240, and at the 2 hr. foiled ribs for 1 & half hrs. then removed foil & grilled another hr. Total cook time was 4 ½ hrs. Tented with foil for 5 min. before cutting up. Serve as is, if you have to have sauce serve it on the side. My wife & I loved them the way they were, almost fall off the bone.
