Ingredients:
  • 4 Cornish Hens
  • 2 gallon(s) Water
  • 2 cup(s) Kosher Salt
  • 3 cup(s) Sugar
  • 1/4 cup(s) Crab Boil
  • 4 tablespoon(s) Black Pepper
  • 1 tablespoon(s) Rosemary
  • 1 tablespoon(s) Thyme

Preperation Steps
  • Make brine mixture and soak hens for 4 hours.
  • Rinse and pat dry. Rub with olive oil and coat with salt free rub.
  • Smoke @225 for approx 3 hrs until breast reaches IT of 165 degrees and pull and let rest for prox 20 minutes.
  • Serve with potatos,roll, corn on the cob and cobbler.
