4 Cornish Hens
2 gallon(s) Water
2 cup(s) Kosher Salt
3 cup(s) Sugar
1/4 cup(s) Crab Boil
4 tablespoon(s) Black Pepper
1 tablespoon(s) Rosemary
1 tablespoon(s) Thyme
Make brine mixture and soak hens for 4 hours.
Rinse and pat dry. Rub with olive oil and coat with salt free rub.
Smoke @225 for approx 3 hrs until breast reaches IT of 165 degrees and pull and let rest for prox 20 minutes.
Serve with potatos,roll, corn on the cob and cobbler.
