Maui Wowie Pineapple Beef Jerky
3 lbs Boneless Beef Rump Roast
1 cup(s) Teriyaki sauce
1/4 cup(s) Brown Sugar
1 teaspoon(s) Kosher Salt
1/4 teaspoon(s) Fresh Ground Pepper
1/4 teaspoon(s) Liquid Smoke
1 20 oz. can Pineapple Chunks
Rinse and pat dry the roast. Thinly slice the roast across the grain. About 1/4 inch slices or less.
Pulverize the Pineapple chunks and juice into pulp in a Cuisinart.
Mix all the marinade ingredients in a medium sized bowl. For HOT, add 3/4 tsp Freshly Ground Pepper and 1 tsp Red Pepper Flakes.
Pour marinade over beef and mix to coat well. Marinate in refrigerator for 24 hours.
Start Traeger on Smoke. Lay the beef slices on the grill.
Smoke for 6-7 hours or until you have achieved the desired firmness and flavor.
