Maui Wowie Pineapple Beef Jerky

  • 3 lbs Boneless Beef Rump Roast
  • 1 cup(s) Teriyaki sauce
  • 1/4 cup(s) Brown Sugar
  • 1 teaspoon(s) Kosher Salt
  • 1/4 teaspoon(s) Fresh Ground Pepper
  • 1/4 teaspoon(s) Liquid Smoke
  • 1 20 oz. can Pineapple Chunks

Preperation Steps
  • Rinse and pat dry the roast. Thinly slice the roast across the grain. About 1/4 inch slices or less.
  • Pulverize the Pineapple chunks and juice into pulp in a Cuisinart.
  • Mix all the marinade ingredients in a medium sized bowl. For HOT, add 3/4 tsp Freshly Ground Pepper and 1 tsp Red Pepper Flakes.
  • Pour marinade over beef and mix to coat well. Marinate in refrigerator for 24 hours.
  • Start Traeger on Smoke. Lay the beef slices on the grill.
  • Smoke for 6-7 hours or until you have achieved the desired firmness and flavor.
