  • 1 Store bought corned beef flat about 3-4 pounds
  • 1 tablespoon(s) cracked black pepper
  • 1 tablespoon(s) ground corriander
  • 1 pack corned beef spice (comes in package)

Preperation Steps
  • Open and rinse corned beef in cold water and pat dry
  • Combine the spices to make a rub and cover the corned beef and let come up to room temperature
  • Start the Traeger on smoke untill lit and pre heat to 225
  • Place the meat on the grill fat side up. If you have a digital thermometer use it
  • cook to an internal temperature of 175 then wrap in foil and in towels and place in an insulated cooler for 1 hour
  • slice as thin as possible across the grain Pile high on rye or sube rolls and enjoy (if you have a meat slicer it use it )
