Eric's Scotch Eggs
1 pound(s) JD Sausage
Hard boil and peel 4 eggs.
Take a 1lb roll of JD sausage and divide into 4 equal parts.
Take 1 pc of sausage and flatten into an oval on a piece of wax paper.
Wrap the sausage around 1 of the eggs and work it like your making a meatball....
Cook at 250 until the temp of the sausage reaches 165
OPTIONAL: Panko and deep fry.
