It's Another Tequila Sunrise Smoked Salmon
2 - 2 pound copper river salmon fillets - skin on
1 cup(s) your favorite anejo tequila
1/4 cup(s) grand marnier
3 cup(s) fresh orange juice
1/8 cup(s) grenadine
make a batch of tequla sunrise. hell, make 2 and drink one!
pour one batch over smoked salmon, skin side down, marinate overnight.
place on grill set to "smoke" for two hours, skin side up. smoke for 2 hours.
flip salmon over, pour remaining tequila sunrise over flesh of salmon, close lid, continue smoking for 1/2 hour.
turn grill off, leave salmon on grill to cool copmpletely - about an hour.
place any remaining salmon (good luck with that!) in the fridge - repeat "eat" process as needed.
