Primed Pulled Beef Sliders

Slow smoked perfection will bring your party to a championship level. Enjoy the savory prime rib rub with the sweetness of the rolls in the melt in your mouth Primed Pulled Beef Sliders.

Serves: 12

Recipe Ingredients

Initial Preparations

  • 4 lbs Beef Chuck Roast
  • 1 tbsp Salt
  • 1 tbsp Black Pepper (Ground)
  • 1 tbsp Garlic Powder
  • 1/2 tbsp Onion Powder
  • 1/2 tsp Rosemary
  • 1/2 tsp Thyme
  • 1.5 oz Olive Oil

Final Preparations

  • 2 lbs Onion (White)
  • 2 cup Beef Better than Bouillon or Beef Broth
  • 24 piece King's Hawaiian Dinner Rolls
  • 1 piece Disposable Aluminum Pan
  • 1 piece Fat Seperator (for Au Jus)

Recipe Instructions

Initial Preparations Instructions:

  1. Measure and mix the dry ingredients (Salt, Black Pepper, Garlic Powder, Onion Powder, Rosemary, and Thyme) together and set aside. Save the Olive Oil for the next step.
  2. Thoroughly coat the chuck roast with the olive oil.
  3. You will now take the dry rub and coat the entire chuck roast. Make sure to rub into any pockets or openings there may be.
  4. Once coated and rubbed cover and place in the refrigerator for 2 hours.
  5. After the meat has marinated for 2 hours you will want to start your grill and let it warm up to 250 degrees for 5 to 10 minutes.
  6. Now that the grill is warm you can place the chuck roast directly on the grill grates. You will leave it directly on the grates for the next 2 hours. NOTE: You will want to begin the Final Preparations section before the 2 hours mark so you can make a seamless transition for the Primed Pulled Beef Sliders.

Final Preparations Instructions:

  1. You will want to take your onions and start to slice them. I prefer to slice them about a 1/4" wide and keep them in larger pieces.
  2. Now you will prepare your Better than Bouillon or warm your beef broth (Depending on what you prefer)
  3. Start this step once the meat has been on the grill for 2 hours. In the disposable aluminum pan you will now layer the bottom with all the onions you sliced and then pour the broth over the onions.
  4. You will now transfer the meat to the disposable aluminum pan and cover tightly to keep the steam from escaping. You can now leave it on the grill for approximately 2 to 3 more hours until the internal temperature of the thickest part of the roast is at 205 degrees.
  5. Once the meat has reached a temperature of 205 degrees you can remove the aluminum pan from the grill and let rest for around 10 minutes.
  6. While the meat is resting turn the grill up to 350. Once the grill has reached 250 you can now place your King's Hawaiian Sweet Rolls in the grill for 5 minutes to warm them up.
  7. Once the meat, onions, and both have rested for 10 minutes you will want to remove the meat and place into a large bowl in order to pull it. Since we are using it with sliders make sure it is pulled into smaller pieces and if there are still larger pieces of meat remaining you can also put a rough chop onto it to make them smaller and easier to fit into the King Hawaiian Rolls.
  8. Now you will want to remove the onions from the pan and place in a dish for serving.
  9. Take the pan and pour the remaining juices into a fat separator and let the juices separate. Once they are separated you can pour into a serving dish and serve au jus on the side with the sliders.
  10. Once the rolls are warmed you are ready to serve. Place the meat and onions on the rolls and serve it up with a side of au jus and you have a perfect party meal.

Black Bean Chicken Quesodilia

Serves: 1

Recipe Ingredients

  • 2 piece 10 In Flour Tortilla
  • 1 piece Chicken Breast
  • 14 oz Refried Black Beans
  • 1/4 cup Jalapeno
  • 1 handful Three Mexican Cheese
  • 1/4 cup Cilantro
  • 1/4 cup Sweet Onion
  • 1 dash Green Onion

Recipe Instructions

  1. Start Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400F and preheat, lid closed, for 10 to 15 minutes.
  2. Season the chicken breasts with seasoning of choice. Place chicken directly on the grill grate and grill, turning once, until the internal temperature is 165F, about 25 to 30 minutes. Remove Chicken and chop once slightly cooled.
  3. Spray the bottom of one tortilla with cooking spray and place it in Traegers Quesadilla Grill Basket. Refried black beans to desired thickness on top of the tortilla. Evenly add chicken, jalapeño, cilantro, sweet onion, green onion and cheese. Place second tortilla on top and spray the top with more cooking spray.
  4. Transfer the Grill Basket with the quesadilla to the Traeger rack. Grill for 7 to 8mins or until bottom tortilla is lightly brown. Flip Quesadilla Grill Basket and let cook until other side is golden brown about 5 to 6minutes. Slice into wedges and serve with guacamole and salsa.
