Break out the skewers and strap your coconuts on. Everyone loves a luau and fresh grilled fish is at the top of the menu. Sweet mahi-mahi makes you feel like you're retreating to the islands. Let the Traeger bring the fire, so you can show off your hula.

Ingredients

Mahi-Mahi Fillets1
Zucchini - Green and Yellow1
Red Onions1 cup
Baby Carrots1 cup
Flat Green Beans1 cup
Olive Oil1 cup
Traeger Veggie Shake1 tsp.
Traeger Cajun Shake1 tsp.
Traeger Blackened Saskatchewan1 tsp.
Traeger Mediterranean Seasoning1 tsp.
Basil Leaves1 tsp.
Traeger Salmon Shake1 tsp.

Preparation

Cut mahi-mahi into fifteen squares.

Mix all ingredients in a shallow pan. Thread ingredients onto Traeger skewers.

When ready to cook, start the Traeger on smoke with the lid open until the fire is established (4-5 minutes). Set the temperature to 450 (high) and preheat, lid closed for 10 to 15 minutes.

Place kabobs in grill and cook for 8 minutes. Remove and enjoy!
