Units of Measurement:
main
12 Pieces sliced bacon, divided
1/3 Cup brown sugar
Nonstick cooking spray, for greasing
1 (8 roll) can pre-made cinnamon rolls with cream cheese frosting
2 Ounce cream cheese, softened

Steps

  • 1

When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.

    350 ˚F / 177 ˚C

  • 2

Dredge 8 of the pieces of bacon in brown sugar, making sure to cover both sides of the bacon.

  • 3

On a cooling rack placed on top of a large baking sheet, place the brown sugared bacon pieces along with the remaining 4 pieces of bacon.

  • 4

Place the baking sheet directly on the grill grates. Close the lid and cook the bacon for 15-20 minutes, or until the fat renders but the bacon is still pliable.

  • 5

Remove the bacon from the grill. Reduce the Traeger temperature to 325°F. Grease an 8 x 8-inch baking dish, or cake pan with nonstick cooking spray.

    325 ˚F / 163 ˚C

  • 6

Open and unroll the cinnamon rolls. Reserve the frosting.

  • 7

While bacon is still warm, place 1 slice of the brown sugared bacon on top of 1 of the unrolled rolls and roll back up. Slice the bacon if necessary to fit the length of the dough. Repeat for all the rolls. Place the bacon-filled cinnamon rolls into the prepared baking dish.

  • 8

Place the baking dish directly on the grill grates. Close the lid, and cook the cinnamon rolls until golden, rotating the pan halfway through the cooking time, 10-15 minutes.

  • 9

In a small bowl, add the cream cheese frosting and mix in the softened cream cheese. Crumble the remaining cooked bacon and add it to the cream cheese frosting.

  • 10

Remove the cinnamon rolls from the grill. Spread the frosting over the cinnamon rolls while they are still warm, and serve. Enjoy!
