Ingredients

Candied Bacon Savory German Pancake:

  • 1 GERMAN PANCAKE
  • 1/2 cup, plus 1 Tbsp TEAHIVE CHEESE
  • 1/2 PURPLE CABBAGE, SLICED & PREPARED
  • 1 LB BACON, SLICED AND CANDIED
  • 3 cups ARUGULA
  • 1/2 cup HONEY MUSTARD VINAIGRETTE
  • 2-3 EDIBLE FLOWERS, FOR GARNISH

German Pancake:

  • 6 EGGS, ROOM TEMPERATURE
  • 1/2 tsp SALT
  • 1 cup FLOUR
  • 1-1/3 cups MILK
  • 6 tbsp BUTTER
  • 1/2 cup TEAHIVE CHEESE, SHREDDED
  • SALT & PEPPER, TO TASTE

Braised Cabbage:

  • 1/2 purple cabbage, cut lengthwise
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp grainy dijon mustard
  • 1 tsp lemon zest

Candied Bacon:

  • 1 lb bacon, slices cut in half
  • 2 Tbsp syrup
  • 3 tbsp brown sugar

Honey Mustard Vinaigrette:

  • 1/3 cup apple cider vinegar
  • 1/3 cup honey
  • 1/3 cup grainy dijon mustard
  • 1/3 cup extra virgin olive oil

Candied Bacon Savory German Pancake:

  • 1 GERMAN PANCAKE
  • 1/2 cup, plus 1 Tbsp TEAHIVE CHEESE
  • 1/2 PURPLE CABBAGE, SLICED & PREPARED
  • 1 LB BACON, SLICED AND CANDIED
  • 3 cups ARUGULA
  • 1/2 cup HONEY MUSTARD VINAIGRETTE
  • 2-3 EDIBLE FLOWERS, FOR GARNISH

German Pancake:

  • 6 EGGS, ROOM TEMPERATURE
  • 1/2 tsp SALT
  • 1 cup FLOUR

  • SALT & PEPPER, TO TASTE

  • 1/2 purple cabbage, cut lengthwise

  • 1 tbsp honey
  • 1 tsp grainy dijon mustard
  • 1 tsp lemon zest

Candied Bacon:

  • 1 lb bacon, slices cut in half
  • 2 Tbsp syrup
  • 3 tbsp brown sugar

Honey Mustard Vinaigrette:

  • 1/3 cup apple cider vinegar
  • 1/3 cup honey
  • 1/3 cup grainy dijon mustard
  • 1/3 cup extra virgin olive oil

Preparation

When ready to cook, start the Traeger according to grill instructions. Set thetemperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes.

Place an empty 15-inch cast iron skillet directly on the grill grate and preheat.

For the German Pancake: Combine eggs, salt, flour and milk in a blender. Place the butter in the hot pan and swirl it around the pan as it melts, coating the bottom and edges. Pour the batter into the prepared pan and close the lid.

Cook for 30 minutes or until the edges rise and the top puffs and browns. Sprinkle the top with cheese and season with salt and pepper.

For the Cabbage: Combine olive oil, honey, mustard and lemon zest in a small bowl and whisk to combine. Brush mixture over the cabbage slices, doing your best to cover all the layers. Place the cabbage slices wedge side up on a perforated sheet pan directly under the bacon.

Cook at 400 degrees F for 30 minutes, until slightly softened and glaze is caramelized. Remove from the Traeger and slice both quarters into 1/4-inch slices lengthwise.

For the Candied Bacon: In a medium sized bowl combine the syrup and the bacon until combined. Top with the brown sugar and mix until well coated. Place bacon slices directly on grill grates, on the top tiers (arranging them directly above the cabbage).

Cook at 400 degrees F for 20 minutes or until the bacon is cooked through and crisp. Lay on a cooling rack until cool, about 5 minutes and cut into bite sized pieces.

For the Honey Mustard Vinaigrette: Combine all ingredients and mix well. Refrigerate until use.

To Assemble: Remove the German pancake from the Traeger and cover with the cheese, salt and pepper. Use a spatula to cut the pancake into 10 slices while it’s still in the cast iron.

Top the german pancake with the cabbage slices in a single layer first, followed by the candied bacon pieces.

Drizzle with the Honey Mustard vinaigrette. Top with arugula, and garnish with additional cheese and edible flower pieces. Enjoy!
