In a bowl, whisk flour, sugar and salt. Cut the butter in, a little at a time, with a pastry cutter or a food processor, until it resembles cornmeal. Add the water little by little until dough forms. Do not put in too much water.
Form the dough into a disk and let it rest for at least 30 minutes in the refrigerator.
While dough rests, in a large bowl add the peaches, blueberries, sugar, salt and lemon juice.
Using a rubber spatula, fold all ingredients and transfer to a 10 inch cast iron pan.
Roll out the pie dough. Using a pastry cutter or a knife cut the dough into pieces.
Place pieces over pie filling in a free form pattern. Brush pie crust with egg wash and sprinkle raw sugar on top.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.
Cook for approximately 45 minutes. When done, pandowdy will bubble and the juices will thicken. Enjoy!
