Smoked Sweet & Spicy Cashews

You'll go nuts for these sweet and spicy cashews. Red pepper chili flakes, fresh rosemary, and Smoked Simple Syrup make for a sweet snack.

Ingredients

1 lb CASHEWS

3 tbsp SAMBAL OLEK

1 tbsp SMOKED SIMPLE SYRUP

ZEST OF 1 LEMON

1/2 Tbsp FRESH ROSEMARY, CHOPPED

1 tsp RED PEPPER FLAKES

1/4 tsp CAYENNE POWDER

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 225 degrees F (with Super Smoke enabled if using a WiFIRE enabled grill) and preheat, lid closed, for 10 to 15 minutes.

In a small bowl combine sambal, simple syrup, lemon zest, rosemary, red pepper flakes and cayenne. Pour mixture over cashews and toss to coat.

Spread cashews out on a sheet tray and place directly on the grill grate. Cook nuts for 1 hour stirring occasionally.

Remove from grill and let cool. Enjoy!
