When ready to cook, set Traeger temperature to 180℉ and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.
For Smoked Raspberry Syrup: Place fresh raspberries on a grill mat and smoke for 30 minutes. After the raspberries have been smoked, reserve a few for garnish and place the remainder into a shallow sheet pan with Traeger Smoked Simple Syrup.
Place sheet pan on the grill grate and smoke for 45 minutes. Remove from grill and let cool. Strain through a fine mesh sieve discarding solids. Transfer the syrup to the refrigerator until ready to use. Makes about 1/2 cup of smoked raspberry syrup.
For cocktail: Add 3/4 ounce smoked raspberry syrup, tequila, lime juice and lemon juice with ice into a mixing glass. Shake and pour over clean ice. Garnish with smoked raspberries and a grilled lime wheel. Enjoy!
