3-2-1 BBQ Beef Cheeks

We’re taking beef cheeks and using our simple 3-2-1 BBQ cooking method for fork tender, wood-fired flavor.

2 (2 lb) beef cheeks, silverskin trimmed
As Needed Traeger Beef Rub
1/4 Cup liquid of choice (beef stock, dark beer, etc.)
2 Tablespoon honey, brown sugar or other sweetener

Steps

    Make sure the beef cheeks are trimmed of all silverskin. Season liberally with Traeger Beef rub.

    When ready to cook, set temperature to 180℉ and preheat, lid closed for 15 minutes.

    Place beef cheeks directly on the grill grate and cook until they reach an internal temperature of 165℉, about 3 hours. Remove from grill and place the cheeks in a small rimmed baking dish.

    Increase grill temperature to 225℉.

    In a small bowl, combine liquid and sweetener and stir until sweetener is dissolved. Pour mixture into the baking dish and return the cheeks to the grill to cook for an additional two hours.

    Remove cheeks from the grill and cover with foil. Return to the grill to cook for an additional hour or until the internal temperature reaches 205℉.

    Remove from the grill and allow the steam to escape. Wrap with foil again and let rest for 30 minutes before shredding or slicing. Enjoy!
