Grilled BaconCheeseburger

Make it a triple. All beef patties stuffed with three different cheeses and topped with double the bacon for a burger you'll melt for.

Ingredients

3/4 lb ground beef

3/4 lb ground bacon

8 slices bacon

(4) 1/2" inch cubes Swiss

(4) 1/2" inch cubes cheddar

(4) 1/2" inch cubes mozzarella

4 buns of choice

Kosher salt and black pepper, to taste

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.

Place bacon strips directly on grill grate and cook for 20 to 25 minutes or until rendered and crispy but not burnt. Remove from grill and set aside.

Turn grill up to High and pre-heat lid closed, for 10 minutes.

Mix the ground beef, ground bacon, salt and pepper to taste in a large bowl. Form the mixture into 8 equal-size balls.

Press the 3 different types of cheese cubes into the center of each ball and cover completely with meat. Form the balls into hamburger patties, about 1/4" thick. Grill burgers until desired doneness and remove from grill.

Toast buns on grill for 1 minute. Place burgers on buns and top with lettuce, tomatoes, onions, pickle, and bacon strips. Top with your favorite condiments. Enjoy!

Great flavor
We loved this recipe. The flavors were incredible and the ground bacon was awesome mixed in with the beef. I portioned the meat out exactly as described. My burgers turned out smaller and rounder than I wanted. I will make an effort to cut flatter pieces of cheese and make the patties bigger when I make it again. I ground the bacon in my kitchen aid meat grinder attachment.
