This beef is bursting with flavor. Marinated in a citrus, garlic, and cilantro mix, rubbed with Traeger Prime Rib Rub then grilled till tender, our carne asada will take your taco game to the next level.

Ingredients

2 lbs SKIRT STEAK

6 oz Traeger Prime Rib Rub

3 ORANGES, JUICED

2 LEMONS, JUICED

4 LIMES, JUICED

3 cloves GARLIC, MINCED

1/2 cup CHOPPED CILANTRO

1 Jalapeño, MINCED

1/2 Tbsp CUMIN

1/4 cup OLIVE OIL

1 tsp SALT

1/2 tsp PEPPER

Preparation

Combine all ingredients for the marinade in a medium bowl and stir well to combine and dissolve the salt.

Trim any excess fat from the skirt steak and place in a large storage bag.

Pour the marinade over steak and transfer to the refrigerator. Marinate in the refrigerator for at least 2 hours.

Remove from marinade and season both sides of the skirt steak with Traeger Prime Rib Rub. Let rest for 30 minutes.

When ready to cook, start the Traeger according to grill instructions. Set the temperature to the Smoke setting (set to Super Smoke if using a WiFIRE-enabled grill) and preheat, lid closed 10 minutes.

Smoke skirt steak for 45 minutes. Remove steak from grill and increase the grill temperature to 450 degrees F (set to 500 degrees F if using a WiFIRE-enabled grill) and preheat, lid closed 10-15 minutes.

When grill reaches temperature, sear each side of the steak for 2 minutes or until meat reaches an internal temperature of 135 degrees F for medium-rare.

Let rest 10 minutes before slicing against the grain. Enjoy!
