Central Texas BBQ Brisket

Hardwood Texas Beef Blend

Don't mess with this Central Texas brisket. It's light on ingredients and heavy on flavor inspired by the "Lone Star State".


1 whole packer brisket (14-18 lbs)

1/2 cup kosher salt

1/2 cup ground black pepper

1 tbsp onion powder

1 tbsp granulated garlic


When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 225 degrees F and preheat, lid closed, for 10 minutes.

Trim the excess fat off the top of the brisket and down to ¼" inch on the bottom. Mix the salt, pepper, onion and garlic. Coat the brisket with a heavy coating of the spice mixture.

Place the brisket in the grill until it reaches an internal temperature of 170 degrees, approximately 5-6 hours.

Remove brisket and wrap tightly in Traeger Butcher Paper. Place the wrapped brisket back in the grill and cook until it reaches an internal temperature of 204 degrees F (about an additional 4-5 hours).

When the brisket reaches 204 degrees F, remove from grill and let rest for 30 minutes.

When ready to eat, unwrap brisket and slice against the grain. Enjoy!
