Smoked Teriyaki Jerky

Take a break from hunting for delicious jerky, we'll help you fire up smoky and flavor-filled morsels of teriyaki meat in your backyard. Grab a smoke shelf, and grill vertical for higher piles of portable snacks.

Ingredients

1/2 cup Soy Sauce

1/4 cup Mirin or Sweet Cooking Wine

2 tbsp Sugar

3 coins (each about 1/4" thick) Fresh Ginger or 2 tsp ground Ginger

1 clove Garlic, Crushed

1/2 tsp Onion Powder

1/2 TSP Black Pepper

2 lbs Trimmed Beef Top or Bottom Round, Sirloin Tip, Flank Steak or Wild Game

Preparation

In a mixing bowl, combine soy sauce, mirin, sugar, ginger, garlic, onion powder, and black pepper.

With a sharp knife, slice the beef into 1/4-inch thick slices against the grain. This is much easier to do if the meat is partially frozen. Trim off any fat or connective tissue.

Put the beef slices in a large re-sealable plastic bag and pour the marinade over the beef. Massage the bag so all the slices get coated with the marinade. Seal the bag and refrigerate for several hours or overnight.

When ready to cook, start the Traeger on Smoke with the lid open for 4-5 minutes or until the fire is established.

Remove the beef from the marinade and discard the marinade.

Dry the beef slices between paper towels and arrange the meat in a single layer on the grill grate.

Smoke on the Traeger for 4 to 5 hours or until the jerky is dry but still pliant when bent.

Immediately transfer the jerky to a re-sealable plastic bag and let it rest for an hour at room temperature. This will help the jerky stay. Any condensation in the bag will be reabsorbed by the jerky.

Squeeze the air out of the bag and keep the jerky in the refrigerator. Enjoy!

Improved it!
I have made this twice and my family loved it until I told them I was going to do it again and then they asked for more flavor. I double and tripled the marinade and in place of wine used Marinade Sauce, 1 cup of apple cider vinegar, 3 tbsp brown sugar and 1/4 cup of water.
INGREDIENTS
1/2 CUP TERIYAKI MARINADE SAUCE
1 CUP APPLE CIDER VINEGAR
3 TBS BROWN SUGAR
1/4 CUP OF WATER
3TSP. POWDERED FRESH GINGER OR POWDERED GINGER
11 CRUSHED GARLIC CLOVE
1 1/2 TSP. ONION POWDER
1 1/2 TSP. BLACK PEPPER
2 LBS. TRIMMED BEEF TOP OR BOTTOM ROUND, SIRLOIN TIP, FLANK STEAK OR WILD GAME
PREPARATION

Teriyaki is amazing
Out of all of the beef jerky this one would be the best to me all I would eat would be this one and only this one teriyaki is Amazing to me I love it with patchion so I'll give a 5 star rating.

I tried this recipe with Eye of Round and Venison. My two teenage boys (one who is very picky) love this recipe. Just the right sweet smokey flavor. Tender and full of great (natural) protein.
