Try a new take on tri-tip with Traeger’s molasses and chili marinade recipe. Simply marinate your tri-tip for up to two hours and then smoke for an hour before bumping up the heat to high and pulling the meat once it hits 130 degrees F.

Ingredients

  • 1/4 cup Brown Sugar
  • 1/4 cup Molasses
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Rice Vinegar
  • 1 Tbsp Olive Oil
  • 2 tsp Chili Powder
  • 1 tsp Ginger
  • 1/2 tsp Freshly ground Black Pepper
  • 5 cloves Garlic, crushed and peeled
  • 2 lbs Tri-Tip, rinsed and dried
  • 1/4 cup Brown Sugar
  • 1/4 cup Molasses
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Rice Vinegar
  • 1 Tbsp Olive Oil
  • 2 tsp Chili Powder
  • 1 tsp Ginger
  • 1/2 tsp Freshly ground Black Pepper
  • 5 cloves Garlic, crushed and peeled
  • 2 lbs Tri-Tip, rinsed and dried

Preparation

For the Marinade: In a large glass bowl or container, combine the brown sugar, molasses, soy sauce, rice vinegar, olive oil, garlic, chili powder, ginger, and black pepper. Whisk to combine.

Place tri-tip in the marinade and turn to coat. Marinate for 1 to 2 hours, covered, turning the steak halfway through.

When ready to cook, start the Traeger according to grill instructions. Set the temperature to the Smoke setting (set to Super Smoke if using a WiFIRE-enabled grill) and preheat, lid closed for 10 minutes.

Place the steak directly on the grill grate and smoke for 1 hour. Do not discard the marinade.

Remove steaks from grill and turn the grill up to 450 degrees F (set to 500 degrees F if using a WiFIRE-enabled grill) and preheat, lid closed for 10 to 15 minutes.

Place the tri-tip back in the marinade and coat it on both sides. Place the steak back on the grill and cook, turning once, until the internal temperature reaches 135 degrees F, about 5-8 minutes per side.  Remove the steak from the grill and allow to rest, uncovered, for 10-15 minutes before slicing.

While the steak rests, place the remaining marinade in a saucepan with 2 Tbsp of water and bring to a boil. Reduce the heat and simmer for 5 minutes. Serve alongside the tri-tip if desired. Enjoy!
