PepperedBeef Jerky

Hardwood Hickory

Spiced up, irresistible beef jerky. This jerky is doused in a beer, soy and black pepper marinade, and smoked low & slow for an epic protein-packed snack.

Ingredients

1 (12 OZ) CAN OR BOTTLE DARK BEER 

1 CUP SOY SAUCE 

1/4 CUP WORCESTERSHIRE SAUCE 

3 Tbsp BROWN SUGAR 

1 Tbsp MORTON TENDER QUICK CURING SALT

1/2 TSP GARLIC SALT 

3-4 Tbsp COARSELY GROUND BLACK PEPPER, DIVIDED

2 lbs TRIMMED BEEF TOP OR BOTTOM ROUND, SIRLOIN TIP, FLANK STEAK OR WILD GAME 

Preparation

Plan ahead, this recipe marinades overnight. In a mixing bowl, combine the beer, soy sauce, Worcestershire sauce, brown sugar, curing salt, garlic salt, and 2 tablespoons of black pepper. 

With a sharp knife, trim any fat or connective tissue off of meat. Slice the beef into 1/4-inch thick slices against the grain (this is easier if the meat is partially frozen).

Put the beef slices into a large re-sealable plastic bag. Pour the marinade mixture over the beef, and massage the bag so that all the slices get coated with the marinade. Seal the bag and refrigerate for several hours, or overnight.   

When ready to cook, start the Traeger grill on Smoke setting (with Super Smoke enabled if using a WiFIRE enabled grill) with the lid open until the fire is established (4 to 5 minutes).   

Remove beef slices from the marinade and discard marinade. Dry the beef slices between paper towels. Sprinkle beef slices generously on both sides with the black pepper. Arrange the meat in a single layer directly on the grill grate.   

Smoke for 4 to 5 hours or until the jerky is dry but still chewy and somewhat pliant when you bend a piece. Transfer to a re-sealable plastic bag while the jerky's still warm. Let the jerky rest for an hour at room temperature.

Squeeze any air from the bag, and refrigerate the jerky. It will keep for several weeks. Enjoy!

Delicious
Easy and excellent taste. I opted to use a local popular hazelnut beer and it was the best batch Ive made so far. I also use garlic powder in the place of garlic salt. Very Good!

So good making 5th batch.
This recipe is so good I'm making my 5th batch now. I've learned a few things:
Skip the bowl and put all the ingredients directly into a zip lock bag. Make sure to lean the bag on something to avoid rolling over and spilling.
I've used both beer and apple juice. Apple juice makes a better flavor in my opinion.
It can be too salty for some; use garlic powder vs garlic salt, I use "37%less sodium soy sauce", and the sweetness of apple juice vs beer seems to help too.
Asking the butcher to cut the meat to 1/4" slices is a free bonus. I had a batch I cut that wasn't even; had to take pieces out at different times.
Bottom round is my favorite cut. London broil had a tough chewy membrane on parts of it. Top round was second best but had a few fatty pieces. Im trying eye of round now. As always, try and cut off visible fat chunks.
I sneak in 3 lbs of meat into this amount of marinade. Just about what fits in my GMG Daniel Boone smoker. I have marinaded between 8 hrs and up to 20 hrs with little difference.
I started to skip paper towel pat dry. Thats flavor man! I just put them on the grill 45 min prior to turning on and enough moisture evaporates that it doesn't ruin the smoke dry (but leaves the flavor). I flip them over near the end when I start to check for done-ness.
At 185 degrees mine are done 3.5 hrs to 4 hrs. Did a few batches at 175-180 to get to 4 hrs.

Great recipe
Was easy to make came out perfect the only difference i made was garlic powder for garlic salt. And not a drinker so substituted 8 oz of apple juice for the beer. Everyone loved it
