There's no better way to do steak than a good ole' reverse sear. This NY strip steak is seasoned with our Traeger Beef Rub, smoked and seared hot for melt-in-your-mouth perfection.

Ingredients

  • 4 (1-1/2" inch thick) New York strip steaks
  • 4 tbsp butter
  • 4 tbsp butter

Preparation

When ready to cook start the Traeger grill on smoke with the lid open until fire is established (4-5 minutes). Set the temperature to 225 degrees F (set to Super Smoke mode if using a WiFIRE-enabled grill) and preheat, lid closed 10-15 minutes.

While the grill is coming up to temperature, season the steaks with Traeger Beef rub.

Place the steaks in the grill and smoke for 60 minutes or until they reach an internal temperature of 105 to 110 degrees F. Remove steaks from grill and set on the counter to rest.

Increase the grill temperature to 450 degrees F (or set to 500 degrees F if using a WiFIRE enabled grill) and let it come up to temperature with the lid close, about 10 minutes.

Return steaks to grill and sear for 4 minutes. Flip steaks and add 1 tbsp butter to each steak.

Sear for another 4 minutes and check the internal temperature. The desired finish temperature is 130 to 135 degrees F for medium-rare.

Once desired temperature is reached, remove steaks from grill. Let rest 5 minutes. Enjoy!
