Reverse seared like a boss, this juicy tri-tip is everything a steak should be: juicy, flavorful, and addicting.

Ingredients

3-5 lb Tri-Tip

1/8 cup pepper

1/8 cup salt

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 225 degrees F and preheat, lid closed, for 10 to 15 minutes. *If using the Timberline grill, select Super Smoke option.

Trim any excess fat off of the tri-tip.

Combine salt and pepper. Season all sides of meat with a heavy coat of the salt and pepper mixture. 

Place tri-tip directly on the grill grate and cook until it reaches an internal temperature of 135 degrees F. This should take 1 to 1-1/2 hours. 

When tri-tip reaches 135 degrees F, pull off the grill and wrap in foil. Set aside while grill heats up.

Turn the grill up to High and preheat, lid closed, for 10 minutes. *If using the Timberline grill, move the lower rack to Sear position. Set the temperature to 500 degrees F and preheat, lid closed, for 10 minutes.

When grill comes to temperature, remove Tri-Tip from foil and sear for 4 minutes on each side. Pull off the grill and allow to rest for 10-15 mins.

Slice against the grain to serve. Enjoy!

A little longer than planned.
Had one of the Costco "pre-rubbed" Tri Tips that was about 2.5 pounds, but followed the temperature recipe above. Took about 2.5 hours to get to 140 but my grill did run about 5-7 degrees lower than the setting. Regardless, the meat came out tender and juicy with that awesome Traegar smoked taste!

Followed the recipe EXCEPT I used Traeger Coffee Rub this time in addition to the salt and pepper. What great flavors!!! The family loved it.
