Traeger BBQ Brisket

Hardwood Hickory

Say hello to bold hickory hardwood flavor. This brisket is given a Traeger Beef Rub coating then smoked low n’ slow to tender perfection.

Ingredients

1 (12-14 lb) Whole Packer Brisket

Preparation

Coat meat liberally with Traeger Beef Rub. When seasoned, wrap brisket in plastic wrap. Let the wrapped meat sit 12 to 24 hours in the refrigerator.

When ready to cook, start the Traeger according to grill instructions. Set the temperature to 225 degrees F and preheat, lid closed, for 10 to 15 minutes.

Place meat fat side down on the grill grate and cook for 6 hours or until internal temperature reaches 160 degrees F. Remove brisket from the grill and wrap in foil.

Place foiled brisket back on grill and cook until it reaches a finished internal temperature of 204 degrees F this should take an additional 3-4 hours.

Remove from grill and allow to rest in the foil for at least 30 minutes. Slice and serve immediately. Enjoy!

As a first timer I followed this method today and it turned out absolutely amazing. The only thing I added was spraying beef bouillon every half hour on it before the foil step.
Thank you Traeger!! This is the first of many briskets for me.

Awesome result
I used a 12.6 lb Costco brisket. Rubbed with yellow mustard followed by Traeger Beef Rub, wrapped in plastic and refrigerated for a day or so. Started at midnight and smoked on smoke level for 6hrs, then turned up to 250. When meat reached 160 internal, about 2 1/2 hrs, I removed and wrapped in foil. Continued on grill until internal temp reached 195, another 2 1/2 hours, about 11AM. Removed and wrapped in towels in cooler. Removed from cooler at 2:30PM and it was still piping hot! Super moist, super tender, nice bark, nice smoke flavor. Many compliments, no need for BBQ sauce. I was using Costco Hybrid Traeger Pellets.
