Grilled Country Ham Biscuit Sandwich

Wake up to this smokin’ breakfast sandwich. Homemade buttermilk biscuits are baked on the Traeger then stacked high with grilled country ham, eggs, and melty swiss cheese.

3 Cup flour
1 Teaspoon baking soda
1 Teaspoon Salt
4 Teaspoon baking powder
1 1/2 Stick sticks unsalted butter, cut into pieces
1 Cup buttermilk
1 Egg, beaten with a splash of cold water, for egg wash
6 Slices country ham
6 Slices Swiss cheese
6 Eggs

    When ready to cook, set the Traeger temperature to 400°F and preheat with the lid closed for 15 minutes.

    In a large bowl, whisk together flour, baking powder, salt, and baking soda. Cut in the butter using two knives (or pulse in a food processor) until butter pieces are the size of peas. Add buttermilk and mix until just combined.

    Place the biscuit dough onto a lightly floured surface and roll out to 1 1/2-inch-thickness. Using a biscuit cutter, cut out biscuit shapes and place on a parchment-lined baking sheet. Brush the tops of biscuits with the egg wash.

    Place the baking sheet directly on the grill grates. Close the lid and bake until the tops are golden brown, 10-15 minutes.

    Place country ham directly on the grill grates next to biscuits and grill until lightly browned and slightly crisp. Top each with a slice of cheese and cook until cheese is melted.

    Remove the biscuits and ham and cheese from the grill and keep warm.

    In a medium nonstick pan, cook eggs to desired doneness.

    To build the sandwiches slice biscuits in half, place a slice of ham and cheese on the bottom half, top with egg, then top with the other half of biscuit. Enjoy!
