Get a load of this dish. This creamy casserole is as comforting as it is delicious and layered with bacon, chicken, and tater tots with a hatch chile kick for a punch flavor in every bite.

Ingredients

  • 2 Tablespoon unsalted butter

  • 1/4 Cup all-purpose flour

  • 2 Can Soup, Cream of Chicken (15 OZ)

  • 2 Cup whole milk

  • 1 Small onion, chopped

  • 2 Medium Grilled Onions, Chopped

  • 1 Pound boneless, skinless chicken thighs

  • 1/2 Cup Hatch Chiles, Chopped

  • 1/4 Teaspoon dried thyme

  • As Needed salt

  • As Needed pepper

  • 1 Cup Smoked Bacon, Chopped

  • As Needed Tater Tots

    When ready to cook, set temperature to High and preheat, lid closed for 15 minutes.

    In a skillet over medium heat, melt butter and stir in the flour. Dilute the chicken soup in the milk and pour into the skillet. Whisk the mixture constantly until it begins to thicken.

    Add the onions, chicken, chiles, thyme, salt, and pepper. Let simmer for about 10 to 15 minutes, until chicken is fully cooked.

    Fold in the smoked bacon and taste to adjust seasoning.

    Transfer mixture to a 2-1/2 quart casserole dish. Cover the mixture with tater tots.
