What's this?

Say Aloha to good times with this grilled cocktail. We take bourbon, simple syrup, and lemon juice and combine that with homemade grilled pineapple juice for a drink that will give you those island vibes no matter where you are.

Ingredients

  • Pineapple, sliced

  • 1/4 Cup Palm Sugar

  • 1 1/2 Ounce bourbon

  • 1 Ounce pineapple juice

  • 1 Ounce Traeger Smoked Simple Syrup

  • 5 Ounce lemon juice

Steps

  • 1

When ready to cook, set the Traeger to 350℉ and preheat, lid closed for 15 minutes.
  • 2

For the Grilled Pineapple Juice: Dust pineapple slices with palm sugar. Place directly on the grill grate and cook for 8 minutes per side.
  • 3

Remove from grill and let cool. Reserve a few pieces for garnish. Run remaining pineapple pieces through a centrifugal juicer to extract juice.
  • 4

To make the drink: Add bourbon, grilled pineapple juice, simple syrup, and lemon juice to a cocktail strainer with ice. Shake vigorously. Double strain into a chilled coupe glass. Garnish with a grilled pineapple chunk and pineapple leaf. Enjoy!
