When ready to cook, set the Traeger to 350℉ and preheat, lid closed for 15 minutes.
For the Grilled Pineapple Juice: Dust pineapple slices with palm sugar. Place directly on the grill grate and cook for 8 minutes per side.
Remove from grill and let cool. Reserve a few pieces for garnish. Run remaining pineapple pieces through a centrifugal juicer to extract juice.
To make the drink: Add bourbon, grilled pineapple juice, simple syrup, and lemon juice to a cocktail strainer with ice. Shake vigorously. Double strain into a chilled coupe glass.
Garnish with a grilled pineapple chunk and pineapple leaf. Enjoy!
