Baked Eggs in Bacon Nest

Try out this perfect low carb grab and go breakfast. Bacon and eggs are given a new wood-fired meaning with this yolk worthy dish.

Ingredients

6 strips BACON

6 EGGS

1/4 tsp SALT

1/4 tsp PEPPER

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until fire is established (4-5 minutes). Set the temperature to 375 degrees F and preheat, lid closed 10-15 minutes.

Place bacon strips directly on the grill grate and cook about 15 minutes. Transfer to a paper towel and pat dry.

Spray a muffin tin liberally with cooking spray. Line each muffin cup with one slice of bacon then crack one egg into each cup. Season each cup with salt and pepper.

Transfer muffin tin to the grill and cook for 15-20 minutes until the bacon is crisp, whites are just set, and yolk is still runny. Enjoy!

Works great It was a big hit with the gang. Another version is place a piece of Canadian bacon on the bottom of the tin then cook. When close to done sprinkle your favorite cheese on top
