Baked Sausage Breakfast Casserole

No more boring breakfasts. Wake up to wood fired flavor with this sausage breakfast bake. Breakfast sausage, hash browns, bacon, bell peppers and cheese are topped with a smokin' egg mixture and baked until brown and bubbly.


1 tbsp olive or vegetable oil

2 red or green bell peppers, diced

2 lbs shredded hash browns or tater tots, defrosted

1 yellow onion, diced

Kosher salt

1 lb thick-cut bacon

1 lb ground breakfast sausage

3 cups shredded medium cheddar cheese

2 lbs shredded hash browns or tater tots, defrosted

10 eggs


When ready to cook, start the Traeger according to grill instructions. Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.

While grill preheats, place a cast iron pan on one side of the grill and allow it to preheat with the lid closed.

When the grill has reached 350 degrees F, place 1 tablespoon of olive oil in the cast iron pan. Add the diced peppers and onion and a teaspoon of salt. Cook, stirring every 5-7 minutes until soft, about 20 minutes, keeping the lid closed.

At the same time, put the bacon on grill and cook until crispy, about 25 to 30 minutes. Drain on paper towels, then chop bacon into bite size pieces.

When the peppers and onions are cooked through, remove from the pan and add the sausage. Cook the sausage until crumbled and barely cooked through, lifting the grill lid to stir it every few minutes, about 8-10 minutes total.

In a large bowl, combine the hash browns or tater tots, cooked sausage, cooked bacon, cooked peppers and onions, cheese, salt and pepper. Mix well and place in a 9x13-inch baking dish.

In a separate bowl, whisk the eggs with the milk and 2 teaspoons of salt and 1 teaspoon of freshly ground pepper. Pour the egg mixture evenly over the other ingredients in the baking dish and let sit for 5 minutes to allow the eggs to absorb into the other ingredients.

Cover casserole with foil and set on the grill. Bake for 45 minutes, then remove the foil and bake for another 15 minutes, or until the mixture is set and the potatoes are browned and the cheese is bubbling. Enjoy!

Awesome brunch
We don't like peppers, so left them out. I used 1/2 of the salt and cooked the sausage before combining with the hash browns , cheese and bacon bits. The only thing I'd add to the recipe would be to spray the pan before filling for the baking. Ours was a little hard to remove. Overall I would call this a great meal.

Modify before cooking
Easy to make casserole but you have to modify the salt and pepper ingredients before cooking. 3 Tbsp of salt is way too much especially with bacon and sausage in the recipe. I made it according to the directions the first time and had to throw it out, I made it the 2nd time and changed it to 2 Teaspoons salt/pepper of each and it was much more edible. It lasted me the whole work week so not bad for meal prep for the week.

Sausage Breakfast Bake
This has the potential to be a great recipe, however, 3 Tbsp of salt and pepper ruined the excitement of the meal for my family. Instead of 3 Tbsp it may only need 3 Tsp.
