Spice fish with desired spice and let it sit for 30 minutes.
When ready to cook, start your Traeger on Smoke with lid open until fire is established (4-5 minutes). Increase the temperature to 325 and allow to preheat, lid open, for 10 - 15 minutes.
Place fish on the grill and cook for approximately 15 minutes until the fish is flaky (be careful not to over cook). Remove from grill and enjoy!
