Sprinkle pork roast with Traeger Pork and Poultry rub on all sides. Place roast in an aluminum foil pan and pour apple juice on top.
When ready to cook, start the Traeger grill on Smoke (set to Super Smoke mode if using a WiFIRE-enabled grill) with the lid open until fire is established (4-5 minutes).
Place roast in the grill and smoke the for 1 hour. Remove roast from grill and increase temperature to 350 degrees F and preheat, lid closed 10-15 minutes.
Cook roast for an additional 2 hours, uncovered.
After two hours, wrap pan with aluminum foil and return to grill to cook for an additional 3 hours or until the internal temperature reaches 204 degrees F.
Allow to rest for 10 minutes before serving. Serve with roasted onions, potatoes, carrots and apples. Enjoy!
