Smoke your senses with this flavorful potato salad. New potatoes are given our smoke treatment and roasted to golden brown, tossed with a spicy mayo and the perfect blend of fresh herbs.

  • 2 Pound small new potatoes

  • 2 Tablespoon olive oil

  • 1 Tablespoon Jacobsen Salt Co. Pure Kosher Sea Salt

  • 1/2 Teaspoon black pepper

  • 3/4 Cup mayonnaise

  • 3 Tablespoon Sriracha, or more to taste

  • 1 Tablespoon chopped parsley

  • 1 Tablespoon chopped chives

    When ready to cook, set Traeger temperature to 225℉ and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.

    Toss potatoes with olive oil then season with salt and pepper. Spread potatoes out on a sheet pan, place the sheet pan directly on the grill grate and smoke for 15 to 20 minutes.

    Remove from the Traeger, increase temperature to 450℉ and preheat, lid closed for 15 minutes.

    Place the potatoes back on the grill and cook an additional 20 to 25 minutes, or until tender.

    When they are cooked through, allow to cool.

    While the potatoes are cooking, combine the mayonnaise and Sriracha, adjusting the amount for desired spice level. When potatoes are cool to the touch, toss potatoes with the Sriracha mayonnaise, parsley and chives. Enjoy!
