This ain't your grandma's salad. Grilled pineapple, roasted coconut and pecans are folded into a sweet creamy marshmallow and fresh fruit mixture for a treat that'll curb any sweet craving.

Ingredients

  • 1 cup TOASTED COCONUT FLAKES
  • 1 cup TOASTED PECAN PIECES
  • 1 can MANDRIN ORANGES
  • 1 cup GRILLED PINEAPPLE
  • 1 cup AMARENA CHERRIES
  • 2 cups MARSHMALLOWS
  • 2 cups HEAVY CREAM
  • 1/4 cup GRANULATED SUGAR
  • 1 tsp VANILLA
  • 1/2 cup SOUR CREAM
  • 1 cup TOASTED COCONUT FLAKES
  • 1 cup TOASTED PECAN PIECES
  • 1 can MANDRIN ORANGES
  • 1 cup GRILLED PINEAPPLE
  • 1 cup AMARENA CHERRIES
  • 2 cups MARSHMALLOWS
  • 2 cups HEAVY CREAM
  • 1/4 cup GRANULATED SUGAR
  • 1 tsp VANILLA
  • 1/2 cup SOUR CREAM

Preparation

When ready to cook start the Traeger grill on smoke with the lid open until fire is established (4-5 minutes). Set the temperature to 375 degrees F and preheat, lid closed 10-15 minutes.

Place coconut and pecans on a sheet try and place on grill for approximately 10 minutes, or until golden brown. Let cool.

Spray pineapple with cooking spray and place directly on the grill grate, for 8 minutes or until you get grill marks. Let cool.

In a large bowl, combine clementines, pineapple, cherries, marshmallows, coconut and pecans.

In the bowl of a stand mixer, whisk together cream and sugar until stiff peaks form. Add vanilla and sour cream and beat again to mix.

Fold cream into the fruit mixture and take to the refrigerator for approximately 2 hours. Serve cold, enjoy!
