Smoked Pico de Gallo by Chef Timothy Hollingsworth

Who knew smoked tomatoes would be so amazing? Chef Timothy did. Pair it with just about anything. Hell, put it on cardboard and you'll have a winner. It's that good.
3 cups roma tomatoes, diced
1 jalapeno, diced
1/2 red onion, diced
1/2 bunch cilantro, cleaned and chopped
1-2 limes, juiced
salt and olive oil to taste
Start the Traeger grill on smoke with the lid open until fire is established (4-5 minutes). Close the lid and allow to preheat, leaving the temperature set to smoke.
Place the diced tomatoes on a small sheet pan spreading them into a thin layer. Place the sheet pan directly on the grill and smoke for 30 minutes.
When the tomatoes are finished, toss all ingredients in a medium bowl and finish with lime juice and salt. Serve and enjoy!
