To make the Pulled Pork Rillette: When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 275 degrees F and preheat lid closed for 10 minutes.
Place the pork in a Dutch oven or cast iron pan large enough to hold both the pork and lard. Heat the lard until melted and pour over pork. Add remaining ingredients, cover with foil and place in the grill.
Cook for 2 ½ to 3 hours or until tender. Remove bay leaves, garlic cloves, and juniper berries. Strain out pork and reserve lard.
Transfer pork to a medium bowl and mash with a fork. Add half of the lard and stir to combine. Place pork in small mason jars and push down with a spoon to remove any air bubbles. Heat the remaining fat until liquefied and pour 1/4 inch of fat on top of the pork.
