When ready to cook, start the Traeger on Smoke with the lid open until a fire is established (4-5 minutes). Turn temperature to High and preheat, lid closed, for 10 to 15 minutes.
Remove steaks from the fridge; pat dry with a paper towel. Rub both sides of the steak generously with Jacobsen Salt and freshly ground black pepper.
When grill grates are hot, place steaks on the outer edge of the grill to achieve the best sear marks. Close the lid and cook 8-10 minutes. Cook to an internal temperature of 142 degrees F, then flip once and cook for an additional 1 minute.
Remove steaks from grill and allow to rest for 5 to 10 minutes. This is an important step, to let the juices redistribute. Enjoy!
