How to cook trout:
> Whether you bought your trout at the fish market, grocery store, or caught it yourself, make sure to clean the outside and inside of the fish. Generously coat the outside of the fish skin. Open the trout from the belly, laying the fish out flat to expose the fillet, and shower the fillets with the Big Game seasoning.
> When ready to cook, start your Traeger and set it to Smoke, lid open, for about 10 minutes, then turn it up to High.
> Place the fish on the grill, skin side down, and cook for 5 minutes.
> Flip the fish over and cook for 3 to 5 minutes more.
> The total cook time is just 10 minutes. Let it rest for a couple minutes then—devour the delicious and savory wild trout.
