Paleo Sweet Potato Breakfast Hash

Hardwood Apple

Healthy, homemade and hearty. Shredded sweet potato, bell peppers, sage and fresh over-easy duck eggs are the makings of this winning hash.

Ingredients

2 Tbsp VIRGIN COCONUT OIL

1 YELLOW ONION, SLICED

2 cloves GARLIC, MINCED

1 cup MIXED BELL PEPPERS, SLICED

Salt and pepper, to taste

1 SWEET POTATO, SHREDDED

4 SAGE LEAVES, SLICED THIN

4 DUCK EGGS

1 TBSP CHOPPED PARSLEY, to garnish

Preparation

When ready to cook, set the Traeger to 350℉ and preheat, lid closed for 15 minutes.

Heat a medium cast iron skillet over medium-high heat. Heat olive oil in the skillet and add onion and sauté until translucent and tender. Add garlic and sauté 30 seconds more.

Add bell peppers, sweet potatoes, and sage and sauté until they begin to cook. Make four holes or nests in the veggies and crack one duck egg in each.

Season everything with salt and pepper and transfer to the grill.

Cook for 20-25 minutes until veggies are tender, egg whites are cooked through and yolks are still runny.

Sprinkle with fresh chopped parsley and serve. Enjoy!
