When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400 degrees F and preheat, lid closed 10-15 minutes.
Candied oranges: Slice orange into wheels and fully coat in brown sugar. Place directly on the grill grate and cook 15 minutes each side until grill marks develop. Remove wheels from grill, set aside and cool. Reserve 2 wheels for garnish.
To make the burnt orange agave: In a small pan, simmer the candied oranges in a thinned out agave syrup (25% water added to agave syrup) at 200 degrees F for 30-45 minutes or to taste. 1 orange slice per ounce of syrup made.
Add burnt orange agave and 5-6 mint leaves into a mixing tin. Muddle ingredients to release oils of mint.
Add bourbon, bitters, crushed ice and shake lightly. Pour all contents into glass or copper mug and add more crushed ice.
Garnish with candied orange wheel and mint. Enjoy!
