When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set temperature to High and preheat, lid closed 10-15 minutes.
Place the lemon and orange peels directly on the grill grate and cook 20-25 minutes or until lightly browned.
Add bourbon, simple syrup, bitters lab, and charred cedar and currant bitters to a mixing glass and stir over ice. Stir until glass is chilled and contents are well diluted.
Strain into a new glass over fresh ice and garnish with lemon and orange peels. Enjoy!
