Add gin, lemon juice and Traeger Simple Syrup to a mixing tin with ice. Shake and strain into a champagne flute.
For the grilled lemons: When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes. Brush lemons with Treager Simple Syrup and place lemons on grill on high. Grill until caramelized marks appear.
Top off with champagne and garnish with a grilled lemon. Enjoy!
