Chef Tip: This recipe requires marinating over night for best results.
Combine lemon juice, olive oil, paprika, oregano, sugar, garlic, red chili and salt. Rub mixture over chicken.
Place in large resealable plastic bag and marinate in refrigerator for 24 hours.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.
Roast chicken until it reaches an internal temperature of 165 degrees F (about 3 hours). Let rest 15 to 20 minutes before carving. Enjoy!
