Puree thai chilies, paprika, scotch bonnet, sugar, salt, onion, garlic and grap seed oil together until smooth. Smother the chicken with mixture and let rest in fridge overnight.
When ready to cook, start the Traeger grill on Smoke with lid open until the fire is established (4 to 5 minutes). Set the temperature to 300 degrees F and preheat, lid closed, for 10 minutes.
Place chicken on grill breast side up and smoke for 3 hours or until it reaches an internal temperature of 165 degrees F in the breast.
Remove from grill and allow to rest for 10 to 15 minutes before slicing. Serve with sides of choice. Enjoy!
