Toss the sweet potato slices in olive oil.
When ready to cook, start the Traeger on Smoke with the lid open until a fire is established (4-5 minutes). Turn temperature to High and preheat, lid closed, for 10 to 15 minutes.
Arrange the sweet potatoes in the grilling basket or on the grill grate in a single layer. Evenly season chips with sea salt.
Cook for 5 minutes on the first side, then and cook an additional 3 to 5 minutes. Lightly season the second side with sea salt. Cooking time will vary depending on how thin you slice the sweet potatoes.
Move the hot chips to a paper towel to cool slightly and absorb any residual oil.
Finish the chips with a light sprinkle of kosher salt. Enjoy!
