Step Up Your Game Hen

Step Up Your Game Hens: Its a tiny SOB of a bird that has such big flavor you'll forget it's a wee little thing and enjoy every bit of it.

Serves: 5

Recipe Ingredients

  • 30 bunch Your Favorite Beer
  • 5 handful Cornish Game Hen
  • 1 gallon Water
  • 1 cup Brown sugar
  • 1 cup Sea salt
  • 24 oz Reds Apple Ale (or Wicked Apple)
  • 2 bunch Traeger Pork/Poultry Seasoning
  • 3 packet Knorr Mushroom Flavor Rice Side

Recipe Instructions

  1. Mix Brine: water, sea salt, brown sugar, 12oz Reds Apple Ale (Enjoy cold beer)
  2. Submerge Game Hens in Brine mixture. I use a 5 gallon bucket (Enjoy Cold Beer) Brine a day or two
  3. Remove Game Hens from Brine and place on a cooling rack or something similar so excess liquid drips off Game Hen (enjoy cold beer)
  4. Rub Traeger Poultry Seasoning heavily over entire surface of bird (enjoy cold beer)
  5. At this time you need to have a couple cold beers ready. Make sure hopper is full have Big game Blend pellets and set to smoke for 5-10 mins ensuring it's lit nice and beer tasting good
  6. After enjoying the previous beer and prepping your beautiful Traeger to smoke set that dial to 250 and relax with a beer

Black Bean Chicken Quesodilia

Serves: 1

Recipe Ingredients

  • 2 piece 10 In Flour Tortilla
  • 1 piece Chicken Breast
  • 14 oz Refried Black Beans
  • 1/4 cup Jalapeno
  • 1 handful Three Mexican Cheese
  • 1/4 cup Cilantro
  • 1/4 cup Sweet Onion
  • 1 dash Green Onion

Recipe Instructions

  1. Start Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400F and preheat, lid closed, for 10 to 15 minutes.
  2. Season the chicken breasts with seasoning of choice. Place chicken directly on the grill grate and grill, turning once, until the internal temperature is 165F, about 25 to 30 minutes. Remove Chicken and chop once slightly cooled.
  3. Spray the bottom of one tortilla with cooking spray and place it in Traegers Quesadilla Grill Basket. Refried black beans to desired thickness on top of the tortilla. Evenly add chicken, jalapeño, cilantro, sweet onion, green onion and cheese. Place second tortilla on top and spray the top with more cooking spray.
  4. Transfer the Grill Basket with the quesadilla to the Traeger rack. Grill for 7 to 8mins or until bottom tortilla is lightly brown. Flip Quesadilla Grill Basket and let cook until other side is golden brown about 5 to 6minutes. Slice into wedges and serve with guacamole and salsa.
