When ready to cook, start the Traeger grill on smoke with the lid open until fire is established (4-5 minutes).
Spread oatmeal in a single layer on a sheet tray.
Place sheet tray directly on the grill grate and smoke 10-15 minutes. Transfer smoked oats to a medium bowl and sprinkle with sea salt.
Pour 2 cups of boiling coconut milk over oats and cover. Let rest for approximately 5 to 10 minutes.
Arrange oatmeal in individual serving dishes or in a serving bowl, top with fruit and drizzle with honey. Enjoy!
