When ready to cook, set Traeger temperature to 250℉ and preheat, lid closed for 15 minutes.
Trim excess fat from chuck roast. Rub roast with Traeger Coffee Rub. Place roast on Traeger and cook for 3-1/2 hours or until roast reaches an internal temperature of 160℉.
Remove roast from grill and wrap in a double layer of aluminum foil, add beef broth and place roast back in grill. Continue to cook for 1-1/2 hours while checking the temperature. The roast is done when the internal temperature reaches 204℉. Check every 30 minutes if internal temperature has not been reached.
Remove roast from grill and pull or shred the meat. Add the drippings back into the meat to help keep it moist.
Serve pulled roast in buns and top with sliced onions, pickles Traeger Special Sauce and Traeger Sweet & Heat BBQ Sauce.
