Cut off the top of the garlic bulb to expose the tops of the cloves. Use 1 tsp of olive oil over the top.
Start the Traeger on Smoke (set to Super Smoke setting if using a WiFIRE enabled grill) with the lid open for 4 to 5 minutes or until the fire is established.
Place garlic on the Traeger and roast on the Smoke setting for 30 to 45 minutes or until the cloves are soft. Remove from grill and allow to cool.
Squeeze the cloves of garlic out of the bulb and into a bowl. Add remaining ingredients and blend until smooth.
Place the brisket in a large plastic bag and then add the marinade. Marinade the brisket for no more than 2 hours per pound. Flip the brisket once during the marinade process.
