BBQ Paleo Pork Spare Ribs

A healthier take on ribs. These pork spares are seasoned with a smoky, savory paprika and chipotle rub, glazed with a sweet tomato based BBQ sauce.


Paleo Rub

4 tbsp kosher salt

2 tbsp coarse ground black pepper

4 tbsp paprika

2 tbsp garlic powder

2 tbsp onion powder

1 tsp chipotle powder

2 racks St. Lewis Style ribs

Paleo BBQ Sauce

15 oz organic tomato sauce

1/2 cup water

1/2 cup apple cider vinegar

1/3 cup honey

2 tsp onion powder

1 1/2 tsp coarse ground black pepper

1 tsp ground mustard

1 tsp paprika


When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 225 degrees F and preheat, lid closed, for 10 to 15 minutes. Set to Super Smoke mode if using a WiFIRE-enabled grill. 

Remove membrane from back of ribs and season both sides with the rub. Let the ribs rest for 15 to 20 minutes.

Place the ribs on the grill bone side down and cook for 4 to 4 1/2 hours.  

Check the internal temperature of the ribs, the desired temperature is 202 degrees F. If not at temperature, cook for an additional 30 minutes or until temperature is reached. 

While the ribs are cooking, prepare the sauce. Combine all the ingredients for the sauce and heat through on stove top.

Place a thin layer of sauce on both sides and continue to cook for 10 minutes for the sauce to set.

Remove ribs from grill and let rest for 10 minutes before slicing. Enjoy!
