Baked Game Day Hatch Chileand Bacon Hot Dish

Get a load of this dish. This creamy casserole is as comforting as it is delicious and layered with bacon, chicken, tater tots with a hatch chile kick for a punch flavor in every bite.
2 Tbsp unsalted butter
1 small onion, finely chopped
1/4 cup all purpose flour
2 cups whole milk
2 (15 oz) cans cream of chicken soup
2 grilled medium onions, chopped
1 lb boneless skinless chicken thighes, chopped
1/2 cup hatch chiles, chopped
1 cup smoked bacon, chopped
1/4 tsp dried thyme
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes.
In a skillet over medium heat, melt butter and stir in the flour. Dilute the chicken soup in the milk and pour into the skillet. Whisk the mixture constantly until it begins to thicken.
Add the onions, chicken, chiles, thyme, salt and pepper. Let simmer for about 10 to 15 minutes, until chicken is fully cooked. Fold in the smoked bacon and taste to adjust sesoning.
Transfer mixture to a 2-1/2 quart casserole dish. Cover the mixture with tater tots.
Bake for 30 to 35 minutes, until tots are golden brown. Serve hot. Enjoy!
