Spicy BBQ Chicken

We’re bringing the heat with this spicy BBQ chicken recipe. Pureed Thai chilies and scotch bonnet peppers are combined with garlic, onion and grape seed oil, then smothered on a whole chicken for one fiery bird.


1 whole chicken

6 thai chiles

2 tbsp sweet paprika

1 scotch bonnet

2 tbsp sugar

3 tbsp salt

1 white onion

5 garlic cloves

4 cups grape seed oil


Puree the thai chilies, paprika, scotch bonnet, sugar, salt, onion, garlic, and grape seed oil together until smooth.

Smother the chicken with mixture and let rest in fridge overnight.

When ready to cook, set the Traeger to 300℉ and preheat, lid closed for 15 minutes.

Place chicken on grill breast side up and smoke for 3 hours or until it reaches an internal temperature of 165℉ in the breast.

Remove from grill and allow to rest for 10 to 15 minutes before slicing.

Serve with sides of choice. Enjoy!
